Had the most delicious dinner tonight. Roasted, butternut squash (brushed with olive oil, chili flakes and garlic) stuffed with roasted red onions, peppers, tomatoes, courgettes, pine nuts and cashew nuts topped with toasted breadcrumbs, parsley and cheese. It was a real thrown together dish as we had veggies that needed to be used but it turned out yummy :) The rest is for my work dinner tomorrow night!
